Baked Beef Taquitos Recipe

Hi my loves!!!

I thought I would do a different kind of post today.  A recipe post.  WAHOO!!


Ingredients:

Olive oil cooking spray
1 medium onion, finely chopped
1 clove garlic
1 lb lean ground beef
1 cup salsa verde
tortillas
1 cup shredded cheddar cheese
Sour cream (optional)

Directions:

1. Heat oven to 400.  In a large skillet, heat a little bit of oil.  Add in onion and garlic.  Cook for about 3 mins.  Add the beef, breaking it up while it cooks, until it is no longer pink, about 5 mins.  Once beef is cooked, add in the salsa verde.  Cook the mixture over low heat, stirring occasionally, for about 10 mins.

2. Place the tortillas on a place and cover them with a damp paper towel.  Microwave them until warm and pliable, about 45 seconds.  Place mixture in tortilla, sprinkle with cheese and wrap.

3. Place them on a foil-lined baking sheet with the seam sides down.  Spray with a little bit of olive oil, then bake them until the filling is heated through and the tortillas are lightly browned, about 8 to 12 mins.  Serve them hot with sour cream and/or salsa.
