Baked Beef Taquitos Recipe

Hi my loves!!!

I thought I would do a different kind of post today.  A recipe post.  WAHOO!!


Olive oil cooking spray
1 medium onion, finely chopped
1 clove garlic
1 lb lean ground beef
1 cup salsa verde
1 cup shredded cheddar cheese
Sour cream (optional)


1. Heat oven to 400.  In a large skillet, heat a little bit of oil.  Add in onion and garlic.  Cook for about 3 mins.  Add the beef, breaking it up while it cooks, until it is no longer pink, about 5 mins.  Once beef is cooked, add in the salsa verde.  Cook the mixture over low heat, stirring occasionally, for about 10 mins.

2. Place the tortillas on a place and cover them with a damp paper towel.  Microwave them until warm and pliable, about 45 seconds.  Place mixture in tortilla, sprinkle with cheese and wrap.

3. Place them on a foil-lined baking sheet with the seam sides down.  Spray with a little bit of olive oil, then bake them until the filling is heated through and the tortillas are lightly browned, about 8 to 12 mins.  Serve them hot with sour cream and/or salsa.

I curled my hair with a 1" curling iron.  Dont forget when you curl your hair with a curling iron or flat iron, let the curls cool down before combing them.

Working out and feeling great

Hi my loves!!!

So this week has been wonderful.  Been waking up 30 mins earlier than normal to workout.  I have been doing toning moves in the morning and running a mile + every afternoon.  Eating lean, clean and green as well.  Made baked beef taquitos last night that were amazing.  Let me know if you would like the recipe.
